Carrot Cake Smoothie (V, GF)

This smoothie is a carrot cake in a drinkable cup. It’s full of healthy ingredients but it tastes like an indulgent cake. I’ve created two layers. The first one imitates cake batter with carrots, orange juice and walnuts. The second imitates the frosting on a cake and it’s made of protein rich silken tofu, creamy cashews and coconut butter.

This is a great and much faster alternative for everyone who love carrot cake. It can be a quick and healthy breakfast or a snack between meals. Either way it’s a fun way of incorporating those healthy vegetables in your diet.

Carrot Cake Smoothie (V, GF)

Healthy and protein rich smoothie with two layers that taste like an indulgent cake. The first one imitates carrot cake batter, the second one frosting on the cake.

Ingredients
  

1st layer:

  • 75 g carrots peeled and grated
  • 12 g walnuts
  • 1 medjool date
  • 1/4 tsp ceylon cinnamon powder
  • 1/8 tsp vanilla powder
  • 30 ml (2 tbsp) fresh orange juice
  • 75 ml (1/4 cup + 1 tbsp) coconut milk from carton not can
  • 2 ice cubes

2nd layer:

  • 100 g silken tofu
  • 10 g cashews
  • 6 g (1 tsp) coconut butter
  • 10 g gluten free oats
  • 1 medjool date
  • 1/16 tsp vanilla powder
  • 100 ml (1/3 cup + 4 tsp) coconut milk from carton not can
  • 2 ice cubes

Instructions
 

1st layer:

  • Peel and grate carrots. Put them into a food processor.
  • Add all other ingredients for the 1st layer into the food processor.
  • Blend well until you get a smooth mixture.
  • Pour it into a glass.

2nd layer:

  • Put all ingredients for the 2nd layer into the food processor.
  • Blend well until you get a smooth mixture.
  • Pour it over the 1st layer.
