When you want a refreshing summer drink this vegan lassi is a great option. You will find 6 different flavours here you can choose from. They all feel not like a smoothie but really just a light drink. The flavours that you can choose from are basic lassi, mango lassi, beetroot lassi, pink pitaya lassi, rhubarb and rose lassi and goji berry lassi. My favourite one is the latter.

It’s super easy and quick to make this drink. Just put all ingredients for the chosen lassi in a blender and mix together. I love decorating my lassi with some saffron and pistachios or some other ingredient that shows which flavour the lassi is. Saffron adds an amazing touch to this drink.

Vegan Lassi 6 Ways (GF)
Ingredients
Basic lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 ml (1/4 cup) unsweetened soy milk or water
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- pistachios
Mango lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 ml (1/4 cup) unsweetened soy milk or water
- 100 g mango
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- pistachios
Beetroot lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 g unsweetened soy milk or water
- 50 g beetroot peeled
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- pistachios
Pink pitaya lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 ml (1/4 cup) unsweetened soy milk or water
- 50 g pink pitaya
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- pistachios
Rose rhubarb lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 ml (1/4 cup) unsweetened soy milk or water
- 50 g rhubarb chopped
- 2.5 ml (1/2 tsp) rose water
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- dried edible rose petals
Goji berry lassi:
- 128 g (1/2 cup) soy or vegan greek yoghurt
- 60 ml (1/4 cup) unsweetened soy milk or water
- 10 g dried goji berries
- heaped 1/3 tsp cardamom powder
- 1 medjool date pitted
- 2-4 ice cubes
To decorate:
- saffron
- dried goji berries
Instructions
- Add all ingredients for your chosen lassi to a blender and mix well.
- Pour lassi in a glass and decorate with desired toppings.
