This bruschetta is an easy and delicious appetiser that you can share with other people. Cherry tomatoes are mixed with fresh basil, oregano, and olive oil, then placed on top of crispy homemade baguette.

Ingredients
 

Topping:

  • 250 g cherry tomatoes sliced thinly
  • 2 tbsp fresh basil cut into ribbons
  • 1 tsp fresh oregano cut into ribbons
  • a pinch of salt
  • 15 ml (1 tbsp) olive oil

For the crispy baguette:

  • 1 baguette
  • 30 - 45 ml (2-3 tbsp) olive oil

Instructions
 

  • Slice cherry tomatoes into small pieces, cut fresh basil and fresh oregano into small ribbons (measure 2 tbsp of basil and 1 tsp of oregano after cutting into ribbons). Mix together in a small bowl.
  • Add salt and 15 ml (1 tbsp) of olive oil. Mix again.
  • Put the bowl in the refrigerator to chill.
  • Slice baguette into round pieces and brush every piece with olive oil on both sides.
  • Arrange slices on a baking tray. Bake at 220 °C for 7 min.
  • Arrange toasted bread on a plate. Take the chilled cherry tomato mix out of the refrigerator, mix it a little bit again, then place it on top of warm crunchy bread.
