Buckwheat with Peanuts (V, GF)

This fluffy buckwheat is an easy side dish made in just a couple of minutes. Roasted peanuts add a pop of nutty flavour.

Ingredients
 

  • 30 g peanuts roasted
  • 100 g buckwheat
  • 240 ml (1 cup) water or 225 ml (3/4 cup + 3 tbsp) if using a gas stove
  • 1/4 tsp salt or to taste

Instructions
 

  • Roast peanuts at 180 °C for 10 min. Leave them to cool a little bit then rub their skin off with your fingers.
  • While peanuts are roasting prepare buckwheat. If using an electric stove put 100g of buckwheat and 240 ml (1 cup) of water in a pot, if using a gas stove use 1 tbsp (15 ml) less water. Heat the pot over the stove. Bring it to boil and if using an electric stove immediately turn the heat off and leave the pot covered on the turned off stove for 15 min. If using a gas stove, turn the heat to low after boiling and cook it covered for 5 min. After 5 min turn the heat off and leave the pot covered on the turned off stove for 10 min.
  • Remove from the heat, add salt and mix.
  • Add roasted peanuts and mix again.
  • Serve warm.
