This vegan Caprese sandwich is incredibly flavourful, fresh, high in protein, and simple to make. It’s made with only a few ingredients: baguette, homemade vegan pesto, plain firm tofu, cherry tomatoes, and fresh basil. Optionally, you can add a sprinkle of dried oregano and dried basil to it. If you already have homemade vegan pesto stored in the fridge, this sandwich is ready in just about 5 minutes.
The original Caprese sandwich is, of course, made with mozzarella. I decided to use plain firm tofu in my vegan Caprese sandwich because I haven’t yet found vegan mozzarella that excites me with its taste. Plain firm tofu seems appropriate because it’s close to a neutral mozzarella flavour and because it keeps this sandwich light, as it should be. Plain firm tofu also brings a good amount of protein to this sandwich.
I’m using cherry tomatoes in this sandwich because I love eating them more than large tomatoes. This vegan Caprese sandwich also has added vegan pesto for a flavour boost. My vegan pesto is to-die-for delicious, and it transforms this simple sandwich into an irresistible meal.

Vegan Caprese Sandwich
Ingredients
- 1 baguette or 2 ciabattas
- 1/4 batch vegan pesto
- 200 plain firm tofu cut in 8 slices
- a sprinkle of dried oregano and basil optional
- 16 cherry tomatoes halved
- 8 fresh basil leaves
Instructions
- Make vegan pesto.
- Slice a baguette in half and then slice both halves lengthwise.
- Spread vegan pesto thinly on the bottom part of the baguette.
- Slice plain firm tofu and place the pieces on the vegan pesto.
- Optionally sprinkle dried oregano and basil on top of tofu.
- Top tofu with sliced cherry tomatoes.
- Top cherry tomatoes with fresh basil leaves.
- Close the sandwich with the upper part of the baguette.
