If you’re looking for a perfect spring soup, look no further. This vibrant green pea soup is light, fresh and with a green pea taste that comes through beautifully. It’s super simple to make, needs only a few ingredients and it tastes delightful. if you need a quick, delicious and protein rich appetiser, this soup is a great choice.

The main ingredient are frozen green peas. They need only about 3 minutes to cook and they have a very fresh taste. I wanted to preserve this freshness in the soup so I added just a little bit of plant based cooking cream and vegan butter which mellow the sharpness of pure green peas. After 3 minutes of cooking the green peas all you have to do is put all ingredients for the soup in a blender and mix together into a silky liquid. All together it takes about 15 minutes and it needs just 3 ingredients (not counting water and salt).

If you do have some more time, you can prepare sides to go with the soup, like homemade baguette, vegan garlic cheesy bread (or just garlic bread) or even avocado toast.

Green Pea Soup (V, GF)
Ingredients
- 400 g frozen green peas
- 400 ml (1 2/3 cups) water
- 1/4 tsp salt
- 10 g (2 tsp) vegan butter
- 60 ml (1/4 cup) plant based cooking cream I used soy cream from Valsoia
To decorate (optional):
- plant based cooking cream
- cooked green peas
Instructions
- Rinse frozen green peas under warm water. If you want to use some of green peas for the decoration on top of the soup, put a handful of additional peas to the rest of 400g of peas.
- Put green peas, water for the soup and salt in a pot and heat it on the stove. Bring it to boil then turn to low and cook covered for 3 min.
- While green peas are cooking, put other two ingredients for the soup in a blender.
- After 3 min turn off the stove. Reserve a handful of cooked green peas for the decoration on top, if using. Add the rest of the peas and water to the blender. Mix everything together well.
- Divide between two bowls. Optional top with plant based cream and cooked green peas.
- Serve warm as it is or with some warm bread on a side, like baguette, vegan garlic cheesy bread (or just garlic bread) or even avocado toast.
