Vegan Mashed Potatoes (GF)

If you are looking for a star dish on your vegan holiday menu, look no further. These vegan mashed potatoes are the best you will ever eat. They are incredibly creamy and the taste is truly amazing. They pair wonderfully as a side to many other dishes (for example vegan stuffed red peppers). You will need only 5 ingredients to prepare this simple dish.

Make sure to cook potatoes well and then mash them well so that they become fluffy without any chunks in them. Then add two ingredients that make them taste so incredible: vegan butter and cashews. These two ingredients I find the best to make the most delicious, creamy vegan mashed potatoes. Mix cashews with soy or cashew milk so that they become liquid.

If you want to bring some colour to the plate, you can use purple/blue potatoes instead of regular ones. They’re just as delicious. I like to cook purple potatoes over steam so that their beautiful colour doesn’t go into water while cooking.

Ingredients
 

  • 2 kg potatoes peeled and cubed
  • 150 g (10 tbsp) vegan butter melted
  • 100 g cashews
  • 240 ml (1 cup) unsweetened soy or cashew milk more if needed
  • 2 tsp salt

Instructions
 

  • Peel and chop the potatoes. You will need 2 kg of potatoes after peeling.
  • Add potatoes to the pot and fill it with water so that all potatoes are covered with water. Bring it to boil then turn to low and cook for 20 min.
  • After potatoes are cooked, discard the water and return potatoes to the pot. Mash potatoes with masher well until you get fluffy potatoes without any chunks in them (this step is the most important to get really smooth and creamy mashed potatoes so put a lot of effort to mash them well).
  • Melt vegan butter over low heat. Warm soy or cashew milk on the stove, then put cashews and plant based milk in a blender and mix into smooth consistency.
  • Add salt, melted vegan butter and cashew mixture to potatoes and mix well. Add more warm plant based milk if needed to get the right consistency that you want.

Notes

*You can also use purple/blue potatoes. They’re just as delicious. I like to cook purple potatoes over steam.
