Lassi is an Indian yoghurt based drink with a thick consistency. In this recipe I used plant based ingredients to make this enjoyable drink vegan. This vegan lassi is perfect for the hot summer days to refresh yourself with a cold, light and protein rich drink. You can choose from 3 different flavours: basic lassi, mango lassi and goji berry lassi. The first two are very classic, while the third one is not so common but I must admit it’s my favourite of the three.

This vegan lassi is super easy to make and can be prepared in 5 minutes. Simply put all ingredients for the chosen lassi in a blender and mix together. Pour into a glass and decorate the lassi with some saffron and pistachios (or in the case of goji berry lassi with some dried goji berries). Saffron adds an amazing touch to this drink so don’t skip on it.

My lassi is sweetened with healthy medjool dates and is therefore refined sugar free. For the vegan yoghurt I recommend you use unsweetened soy yoghurt or vegan greek style yoghurt that is also soy based. The taste between these two won’t be much different in a lassi but with vegan greek style yoghurt you can get more protein.

Vegan Lassi 3 Ways (GF)
Ingredients
Basic lassi:
- 256 g (1 cup) unsweetened soy yoghurt or vegan greek yoghurt
- 120 ml (1/2 cup) unsweetened soy milk
- 3/4 tsp cardamom powder
- 2 medjool dates pitted
- 4 ice cubes
To decorate:
- saffron
- pistachios
Mango lassi:
- 256 g (1 cup) unsweetened soy yoghurt or vegan greek yoghurt
- 120 ml (1/2 cup) unsweetened soy milk
- 200 g mango peeled and chopped
- 3/4 tsp cardamom powder
- 2 medjool dates pitted
- 4 ice cubes
To decorate:
- saffron
- pistachios
Goji berry lassi:
- 256 g (1 cup) unsweetened soy yoghurt or vegan greek yoghurt
- 120 ml (1/2 cup) unsweetened soy milk
- 20 g dried goji berries
- 3/4 tsp cardamom powder
- 2 medjool dates pitted
- 4 ice cubes
To decorate:
- saffron
- dried goji berries
Instructions
- Add all ingredients for your chosen lassi to a blender and mix well.
- Pour lassi in two glasses and decorate with desired toppings.
