Marinara Sauce (V, GF)

This marinara sauce is bursting with flavour and it will make any dish delicious. Forget the boring plain tomato sauce. if you want to add real flavour to many different dishes, this simple sauce is a perfect solution. From pasta, lasagna to pizza, vegan meatballs or vegan meatball sub this marinara sauce will elevate any recipe.

The rich flavour in this sauce is built with a few key ingredients. Each ingredient brings something distinct to the final flavour so do not skip on any of them. The ingredients that you will need for this sauce are: olive oil, garlic, chilli flakes, fresh oregano, tomato paste, vegan red wine, peeled crushed or diced tomatoes, maple syrup, nutritional yeast, fresh basil and salt.

Ingredients
 

  • 30 ml (2 tbsp) olive oil
  • 4 garlic cloves minced
  • 1/4 tsp chilli flakes
  • 1 tsp chopped fresh oregano measured after chopping
  • 4 tsp tomato paste
  • 120 ml (1/2 cup) vegan red wine I used Chianti Classico by Cecchi 2018
  • 800 g (2 cans) peeled crushed or diced tomatoes
  • 5 ml (1 tsp) maple syrup
  • 1/2 tsp salt
  • 1 1/2 tbsp nutritional yeast I used fortified with B12
  • 1 tbsp roughly chopped fresh basil measured after chopping

Instructions
 

  • Heat olive oil in a pot over low or low to medium heat. Add minced garlic cloves and chilli flakes and slowly toast them. Don't toast too much because they will continue to toast as you cook further.
  • Add chopped fresh oregano, mix and toast for about a minute.
  • Add tomato paste, mix and toast for about a minute.
  • Add wine, mix and increase the heat to high. Cook until all the wine evaporates. Then lower again the heat to low.
  • Add tomatoes in a can, maple syrup and salt. Mix together. Increase the heat to medium and wait until it starts boiling, then lower the heat again to low or low to medium.
  • Cook uncovered until the sauce thickens.
  • Add nutritional yeast and chopped fresh basil. Cook for 1 min more then turn off the heat.

Notes

*Add basil in the last minute of cooking so that it doesn’t lose the flavour when it’s exposed to heat for too long.
*Use fresh not dried oregano and basil for the best taste.
